Dish name: – Baingan ka Bharta

Baingan is also known as eggplant or aubergine or brinjal. Its scientific name is Solanum Melogena.

Preparation time: – 45 minutes.

Cooking time: – 15 minutes.

Serves: – 1- 2 people. (I have used one brinjal to demonstrate)

Ingredients :-

• Brinjal – one small brinjal

• Tomatoes – 2 nos.

• Onions – 2 nos.

• Garlic – 2 to 3 flakes.

• Ginger – half an inch.

• Green chili – 1 no.

• Coriander leaves – few sprigs.

• Turmeric powder – a pinch.

• Red chili powder – a pinch.

• Coriander powder –a pinch.

• Cumin seeds – a pinch.

• Cooking oil / Mustard oil – 3 tbs.

• Salt – to taste.

Methods: –

• Now apply oil on brinjal and then make a slit.

• Then stuff garlic into brinjal.

• Roast brinjal in hot ash or hot Tava or cooking range with the help of deep-fry strainer wire skimmer which is easy to roast.

• Then remove the skin and mash it.

• Now chop onions, tomatoes, green chili, and coriander leaves.

• Mix well.

• Now add 2tbs of oil, allow oil to heat then add cumin seeds let it fry for few seconds.

• Once onions are golden in color then add all the masala i.e. turmeric, red chili, and coriander powder, and sauté for 2-3 minutes. • Then add mashed brinjal, mix well and cook for 2-3 minutes.

• Add salt to taste, add chopped coriander leaves, chopped green chili and it is ready to serve.

Note: –

• Don’t put the roasted brinjal into the water, this will lose the smoky flavor of roasted brinjal.

• Purchase medium size brinjal. Avoid using big brinjal because it is very spongy from the inside.
