Dish name:- Ayala Fry

It has many name in India Mackerel/Aila/Ayala/ Kanangeluthi/ Kannangadatha/ Bangude/Bangda .

Today I am going to make Ayala fry with simple ingredients.

Preparation time: – 1 hrs.

Marinating time: -30 minutes.

Cooking time: – 30 minutes.

Serves: – 2 people. (I have used two fish to demonstrate)

Ingredients for marinating for two fish: –

1) Turmeric powder – 1 teaspoon.

2) Red chili powder – 1 teaspoon. (you can increase the quantity according to your taste)

3) Black pepper – 1 teaspoon. (you can increase the quantity according to your taste)

4) Salt to taste.

5) Mustard oil – 3 tablespoons.

Methods: –

• Clean and remove all entrails.

• Wash Ayala fish with salt.

• Make a small cut on both sides of the fish then start applying the paste properly.

• Then rest the fish for 30 minutes to an hour for proper marination. Then pour 3 tablespoons of mustard oil and add fish when oil reaches its smoking point. Once the fish is in golden color then remove it from the pan.

Ingredients for preparing side dish: –

1) Ginger – 25 g

2) Garlic – 5 to 6 cloves (depending upon the size of garlic cloves)

3) Green chilies – 2 nos.

4) Coriander (Cilantro) leaves – half medium bunch fresh coriander leaves

5) Green onion leaves

6) Onions – 3 nos. (you can increase the quantity according to the size of onions)

Ingredients for preparing side dish

For enhancing the taste of the side dish I used the leftover mustard oil for frying.

Methods: –

• Now fry ginger, garlic, sliced green chilies, and sliced onions. Cook till the raw flavor goes away.

• Add coriander leaves, chopped green onion leaves, and mix well.
