Potato Stew

Dish name: – Ishtu || Simple Kerala style potato Stew || Potato White Stew || Kerala Ishtu || Kerala Stew

Kerala is full of surprises with its beautiful backwaters, scenic beauty, amazing beaches, spices and mouthwatering cuisines. Especially Kerala food will amaze you every time you prepare or have it from good local shops.

Stew is a simple recipe and does not take much time to prepare. It is very healthy with fewer spices.

Stew can be prepared with vegetables or eggs or chicken or mutton or beef.

You can have it with some favourite combination like Appam, Rice, Idiyappam, Chapatti etc.

Potato Stew is also called Ishtu.

Preparation time: – 30-40 minutes. (Including extraction of coconut milk)

Cooking time: – 20 minutes.

Serves: – 2-3.

Ingredients: –

• Potato – 5 small.

• Onion – 2 small.

• Ginger- small piece.

• Green chilli – 1 no.

• Coconut – 1 no.

• Coconut oil – 3 tablespoons.

• Curry leaves – 1 sprig.

• Salt – to taste.

Methods: –

• Frist grate the coconut.

• Now use cotton cloth or muslin cloth for extraction. Extract coconut milk two times i.e. thick and thin milk.

• Chop ginger and slit green chilli.

• Peel potatoes.

• Roughly cut potatoes and onions into large pieces.

• Now take a pressure cooker and in medium flame pour 2 tablespoons of coconut oil.

• Add green chilli, chopped ginger, chopped onions, chopped potatoes and sauté for a minute.

• Pour second extraction (thin milk), let it cook, and lock the pressure cooker to give one whistle. (one whistle is enough to cook potatoes)

Thin milk ( second extract)

• Add half a teaspoon of salt.

• Now mash few potatoes to make the gravy thick.

• Pour the first extract. (thick milk)

Pouring thick milk (first extract)

• After pouring coconut milk don’t boil it and quickly turn off the gas.

• Add crushed curry leaves and pour coconut oil.

• And it is ready to serve.

Note: –

1. After pouring the first extraction (thick milk) don’t allow to boil it, if you cook it will curdle.

2. If you are using canned coconut milk/coconut milk powder then it is better to add last.
