Indian cottage cheese or commonly known as paneer. It is a fresh acid-set cheese which is very common in Indian sub- continents like India, Pakistan, Bhutan, Bangladesh, Nepal.
I have shown you how to make paneer or Indian cottage cheese and a simple recipe of Paneer Bhurji with fewer spices.
It is best served with rotis or rumali roti or any parathas or with rice also.
In this recipe, I have used simple masalas like red chilli powder, turmeric powder, coriander powder and ghee. You can also use garam masala or black pepper.
This is my version of making Paneer Bhurji with minimum ingredients in a simple way.
NOTE: –
There are two different preparation times: –
1. For making paneer.
2. For making paneer Bhurji recipe.
1. For making paneer.
Preparation time: – 30-40 minutes.
Cooking time: – 5 minutes.
Serves: – 2.
Ingredients: –
• Milk – 1 liter. (I have used full cream milk)
• Curd – 2 tablespoons.
Methods: –
- Pour 1ltr milk into a vessel and cook it on a medium flame.
- Once it comes to the boiling stage then add two spoons of curd to it.
- Stir it slowly and you will see the entire milk begins to curdle.
- Cook for 5 minutes until it is completely curdled.
- Use a muslin cloth or clean cotton cloth to strain.
- Strain the curdled milk and you will see soft paneer.
- Pour cold water on it to cool down and tighten it with a muslin cloth to drain it completely.
I have used a vessel filled with water or you can use a heavy object on it to drain the leftover water from the paneer.
Allow the paneer to settle for 30 minutes.
After 30 minutes remove the muslin cloth carefully.
2. For making paneer Bhurji recipe.
Preparation time: – 10 minutes
Cooking time: – 5 minutes.
Serves: – 2.
Ingredients: –
- Ginger- small piece.
- Garlic – 1 bulb (5-6 cloves)
- Green chilli – 1 no.
- Tomatoes – 3 nos.
- Onions – 2 nos. (big one)
- Lemon – 1 no.
- Coriander leaves – 2 sprigs.
Methods: –
- Heat ghee in a pan, add cumin seeds and let it splutter.
- Add chopped ginger & garlic, sauté it till the raw flavour goes away.
- Add chopped onions and sauté till it gets translucent.
- Add chopped green chilli and tomatoes and mix it well.
- Add salt, red chilli powder, turmeric powder, coriander powder and mix it well.
- Add the crumbled paneer and mix well and cook for 2 minutes.
- Switch off the flame.
- Squeeze lemon.
- Add chopped coriander leaves and mix well.
- Ready to serve.
Note:-
In one liter milk you will get 200g of paneer.
